Ingredients
1 tablespoon smooth salt-reduced peanut butter
1 teaspoon salt-reduced soy sauce
1 tablespoon boiling water
2 long wholegrain bread rolls (100g), split
60 gram (2 ounces) thinly sliced salt-reduced rare roast beef
4 butter lettuce leaves
1 small_piece carrot (70g), sliced thinly
4 long sprigs fresh coriander leaves (cilantro)
1 green onion, halved crossways
1/2 fresh long red chilli, sliced thinly
fresh lime juice, to serve
Method
1. In a small bowl, combine peanut butter, sauce and water. Spread over the inside of bread rolls.
2. Sandwich beef, lettuce, carrot, coriander, green onion and chilli between rolls. Add a squeeze of lime juice before serving, if desired.
medium GI You could use left-over roast beef or char-grill a rump steak.
