Pasta bakes are such a simple, comforting meal, and this salmon pasta bake also makes for a brilliant cost-effective meal. Perfect as a dinner, and we also love to meal prep this for lunches during the week.
We’ve used tinned pink salmon in this recipe but you can change out to tuna (or any other tinned fish you prefer!)

Method
Preheat oven to 180°C or 160°C fan forced. Cook pasta in a large saucepan of boiling salted water for 8 minutes or until tender. Just before pasta is cooked, add broccoli and peas. Return to the boil; boil, uncovered, for 1 minute. Drain pasta and vegetables; return to pan.
Meanwhile, melt butter in a large saucepan over moderate heat. Add flour: cook and stir for 1 minute. Gradually add milk; cook and stir for 2-3 minutes or until mixture boils and thickens. Simmer 1 minute then stir in half the cheese.
Add salmon and cheese sauce to pasta mixture. Season. Spoon pasta mixture into a 2-litre (8-cup) ovenproof dish. Sprinkle with combined remaining cheese and breadcrumbs. Spray top with oil. Bake for 20 minutes or until crisp and golden brown.
You can replace salmon with tuna. To make fresh breadcrumbs, tear day-old bread into pieces and process until coarse.
