Bring a touch of Christmas magic to your table with this festive air fryer roast pork with apricot, fetta and pistachio stuffing.

To create the stuffing, heat half the oil in a medium frying pan; cook onion and garlic, stirring, until onion softens. Transfer to a large bowl; stir in remaining ingredients. Season to taste; cool.
Open out the pork and place on a board, rind-side down. Slice through the thickest part of the pork horizontally, without cutting all the way through. Open out the pork to form one large piece, press the stuffing along the width of the pork. Roll pork to enclose stuffing, securing with kitchen string at 2cm intervals. Rub remaining oil and salt over pork rind.
Preheat air fryer to 200°C for 3 minutes.
Taking care, place pork, rind side up in the air-fryer basket. Cook, uncovered, for 40 minutes or until rind is blistered and browned. Reset the oven temperature to 160°C, roast for a further 30 minutes or until pork is tender (internal temperature 70-75°C is reached on a meat thermometer).
Remove pork from dish, cover loosely with foil; stand 10 minutes before carving.
Serve sliced pork with roast potatoes, if desired.
