Prosciutto steaks with creamy mushrooms

Tender eye fillet steak wrapped with prosciutto, served with a delicious creamy mushroom sauce, sprinkled with chives and accompanied with mashed potato and a fresh salad.

Method

1.Preheat chargrill on high. Wrap prosciutto around steaks, and brush steaks with oil. Chargrill 3-4 minutes each side, until cooked to taste. Rest, covered.
2.To make mushrooms, heat butter and oil together in a large frying pan on high. Add mushrooms and cook, stirring, 3-4 minutes, until they begin to soften. Add garlic and cook 1 minute more. Blend in wine and mustard. Cook, stirring, until reduced by half. Pour in cream. Bring to boil, stirring. Simmer 3-4 minutes, until thickened slightly. Season to taste.
3.To serve, spoon creamy mushrooms over steak. Sprinkle with chives. Accompany with mashed potato and salad.
