Pasta with rocket, fetta and roasted peppers

400 gram tortiglioni or penne

450 gram jar roasted peeled whole peppers, drained, finely sliced

180 gram marinated feta in oil, crumbled

1/2 cup (75g) toasted pine nuts

1/2 cup (60g) black olives, pitted

50 gram baby rocket leaves

2 green onions (shallots), finely sliced

Method

Pasta with rocket, fetta and roasted peppers

1.Cook pasta in a large saucepan of boiling, salted water according to packet directions.

2.Meanwhile, in a large bowl, combine sliced peppers, feta and oil, pine nuts, olives, rocket and green onions.

3.Drain pasta, add to rocket mixture and toss to combine. Season to taste. Serve.

This pasta dish can be served hot or cold as a salad.
