1.In a large saucepan of boiling salted water, cook pasta following packet instructions. Drain well.
2.Meanwhile, melt butter in a large frying pan over high heat. Add cream and 1 1/4 cups parmesan. Bring to a simmer.
3.Add the pasta to pan along with nutmeg. Season to taste. Toss to coat well.
4.Serve with extra parmesan and a few torn basil leaves (optioned). Accompany with crusty bread.
When coating the pasta with sauce, it’s easier if you stir in half the pasta first, then the remaining half.
