Argentine-style steak with corn salsa

Method

1.Preheat a chargrill or barbecue. Peel back corn husks without removing and pull out silk. Replace husks and grill corn 10cm from heat source, turning frequently, for 10 minutes, until cooked.
2.Season steak with salt and freshly ground pepper and grill for 2-3 minutes each side, until browned and cooked medium rare. Remove to a plate and set aside to rest for 5 minutes.
3.Meanwhile, make salsa: Combine tomato, onion, capsicum, coriander, garlic, lemon juice and oil in a bowl. Remove corn from cob and toss through salsa. Season to taste. Slice steak and serve with salsa.
