Method
1.Heat butter and oil together in a large frying pan on medium until foaming.
2.Saute garlic 30 seconds, until fragrant. Add prawns and cook 2-3 minutes, stirring occasionally, until almost cooked through.
3.Add tomatos, juice and zest and cook 2-3 minutes, until tomatoes soften slightly.
4.Meanwhile, cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and reserve 2 tablespoons cooking liquid.
5.Add pasta to frying pan with snow peas and reserved water. Season to taste and toss well. Serve topped with crumbled feta and basil leaves.
Wine suggestion: Serve this dish with a glass of chilled Riesling Rose.
