Upside down apple cake

Ready to eat in less than an hour, this moist apple cake will tantalise your tastebuds. It's delicious served with dollop of thick cream.

Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Melt butter in a 23cm (top measurement) heavy-based, ovenproof, non-stick frypan on medium heat. Cook apple for 10 minutes or until golden brown all over. Sprinkle with brown sugar.
3.Meanwhile, sift flour, baking powder and salt into a bowl. Combine milk, eggs, caster sugar, vanilla and cardamom in another bowl; whisk until smooth. Fold into flour mixture until just combined.
4.Spoon mixture over apple in frypan. Bake for 25-30 minutes or until a skewer inserted into centre comes out clean. Turn out onto a flat plate and serve hot with cream.

Golden delicious apples are best for baking. If you don’t have an ovenproof frypan, complete step 2 in a frypan, then transfer mixture to an ovenproof dish.
