Ingredients

Method

1.Place egg-yolks, sugar and champagne in a large heal-proof bowl. Whisk until well combined.
2.Place bowl over a saucepan of simmering water. Whisk mixture constantly for 8-10 minutes, or until the sabayon has thickened and doubles in volume.
3.Divide berries into serving glasses. Pour sabayon over. Serve with almond bread or biscotti.

Do not allow the water to touch the base of the bowl as it may make the mixture curdle due to overheating.
