1.Preheat oven to 180°C or 160°C fan-forced. Grease and line a 20cm square cake pan.
2.Pour golden syrup over base of prepared pan and spread to cover. Arrange pineapple slices over syrup.
3.Using an electric mixer, beat eggs, sugar and vanilla extract for 8-10 minutes, until thick and pale. Add butter and beat to combine. Fold through flour. Spoon into pan, taking care not to disturb pineapple. Smooth top with a spatula.
4.Bake for 30-35 minutes, until a skewer inserted comes out clean. Invert onto a serving plate and set aside for 5 minutes before removing pan. Serve hot or cold with thick cream, if desired.
