Method
1.Preheat oven to hot, 200°C. Line 2 baking trays with baking paper.
2.Pour condensed milk into a large bowl. Using a spatula, gradually mix in lemon juice.
3.Fold in coconut, until mixture thickens. Stir in passiontruit pulp and lemon zest. Cover with plastic wrap; chill until required.
4.To make palmiers, join pastry sheets to make one large sheet by pressing 2 sides together. Roll opposite sides of pastry in firmly so it forms a scroll shape. Cut into 1.5cm slices.
5.Arrange pastry on prepared baking trays. Bake 15-20 minutes, until golden and puffed. Transfer to a wire rack to cool completely.
6.To serve, pile passionfruit lemon coconut onto a palmier, then top with another palmier. Dust with icing sugar.
