Marbled meringue kisses

This bite sized balls of heaven are beautiful served with a cup of hot coffee or on their own as a sweet afternoon treat. Decadent chocolate frosting is sandwiched between pink and white marbled meringue kisses to create the ultimate petite dessert.

Ingredients

Method

1.Preheat oven to 120°C (100°C fan-forced). Line 2 baking trays with baking paper. Using an electric mixer, beat egg whites and salt in clean, dry large bowl until soft peaks form. Gradually add sugar, beating well after each addition, until sugar dissolves and mixture is thick and glossy.
2.Spoon mixture onto prepared trays to create 24 small rounds. Place food colouring in a small bowl. Using a skewer, dip tip of skewer into food colouring then swirl through meringue to marble.
3.Bake for 1 hour or until firm. Turn off oven. Cool meringues in oven, with door ajar, for 2 hours or until at room temperature.
4.Spread bases of meringues with frosting. Sandwich meringues together to make 12 kisses.

To test if sugar is dissolved completely, rub meringue mixture between fingers. If grainy, continue beating.
