Marble cakes with caramel icing

1.Preheat oven to moderate, 180°C. Lightly grease a 12-hole mini loaf or friand pan.
2.In a large bowl, beat butter and sugar together using an electric mixer until pale and creamy. Add eggs one at a time, beating.
3.Lightly fold flour into creamed mixture, alternately with milk, beginning and ending with flour. Divide mixture evenly into 3 portions.
4.Leave one portion plain, add combined cocoa and water to another portion, and a few drops of food colouring to the remaining portion.
5.Drop alternate colours into each hole of prepared pan until 2/3 full. Swirl gently with a skewer.
6.Bake for 20-25 minutes until cooked when tested. Cool cakes in pan for 5 minutes, before turning onto a wire rack to cool completely.

Caramel icing

7.Heat brown sugar and butter in a small saucepan on low, stirring until sugar dissolves.
8.Blend in milk, stirring 2 minutes. Whisk in icing- sugar mixture until smooth.
9.Cool slightly before drizzling over cooled cakes.
