Coffee zabaglione

Take a trip to Italy with this quick but indulgent dessert. Creamy, rich coffee flavours coat this adult treat, complete with fresh fruit and a few sneaky pieces of biscotti.

Ingredients

Method

1.Dissolve coffee in 1 tablespoon boiling water. Stir in marsala.
2.Place yolks and sugar in a medium heatproof glass bowl over a saucepan of barely simmering water. Using a whisk, beat until thick and foamy. Gradually beat in coffee mixture. Continue to whisk for 6-8 minutes, or until the mixture is thick and creamy and coats the back of a metal spoon.
3.Place berries in glasses. Top with zabaglione. Serve at once with biscotti.

Ensure base of bowl does not touch boiling water when whisking. Marsala is fortified wine; you can use sherry.
