Method

Coffee butter cream

1.Combine coffee and cocoa powder in a small jug. Stir in 1 tablespoon boiling water until coffee dissolves; cool.
2.Using an electric mixer, beat butter in a small bowl until pale and creamy. Beat in sifted icing sugar, then coffee mixture until combined. Chill for 15 minutes or until spreadable.

3.In a food processor finely chop chocolate. Add flour and sugar; process until combined. Add butter; process until crumbly. Add egg; process until dough forms. (If pastry is too dry, add 2-3 teaspoons water).
4.Turn out dough onto a lightly floured surface; knead gently until smooth. Divide dough into 2 portions. Shape each portion into a disc. Wrap in plastic food wrap; chill for 30 minutes.
5.Preheat oven to 180°C/160°C fan forced. Grease and line 2 large baking trays with baking paper. Roll out each dough portion between sheets of baking paper until 3mm thick. Using a 5cm-square fluted pastry cutter, cut 20 biscuits from each dough portion (40 in total).
6.Place biscuits on prepared trays about 3cm apart to allow for spreading. Bake for 12-15 minutes or until golden brown. Remove from oven; cool on trays until firm.
7.Sandwich butter cream between biscuits. Serve.

No square cutter? Hand cut using a ruler as a guide.
