Method
1.Preheat the oven to 180°C, and line two baking trays with baking paper.
2.Sift flour, caster sugar and cinnamon into a large bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Stir in the cranberries.
3.Make a well in the centre and add the egg and milk, then stir gently to form a stiff dough.
4.Place large spoonfuls onto the trays. Combine sugar and cinnamon, then sprinkle generously onto rock cakes.
5.Bake for 12-15 minutes or until lightly browned. Eat while warm with butter and jam or drizzle with honey.
This was one of the first recipes I was allowed to make on my own as a child, and I now see why my mum chose it. It has lots of measuring, sifting, rubbing in with your fingers and gentle mixing – although I thought the best bit was eating them warm straight out of the oven without having to wait for them to cool! – Jo Wilcox
