Method
1.Preheat oven to 200°C/180°C fan-forced. Lightly grease four 3/4-cup ovenproof dishes or ramekins. Place dishes on a baking tray.
2.Place chocolate and butter in a medium heatproof bowl over saucepan of simmering water (don’t let base of bowl touch the water). Cook and stir for 4-5 minutes or until mixture is melted and combined.
3.Using an electric mixer, beat eggs, sugar and vanilla in a medium bowl for 5 minutes or until thick and creamy. Gently fold in flour, cocoa powder and chocolate mixture until combined. Spoon into prepared dishes.
4.Bake for 10-12 minutes or until just firm (the centre will be soft). Remove from oven. Dust with extra cocoa powder. Serve with ice-cream.
Serve puddings immediately while centre is still gooey.
