Method
1.In a bowl, mash pie apple lightly. Stir in all remaining ingredients until well combined.
2.Spoon even amounts of the mixture into four greased 3/4-cup souffle dishes.
3.Cover with foil. Place on a trivet in the base of the pressure cooker. Add enough water to come a quarter of the way up the sides of the dishes.
4.Close the pressure cooker, Bring up to pressure following manufacturer’s instructions (until steam escapes at a constant rate and there is a regular hissing sound). Reduce heat to low. Cook 25 minutes. Release pressure straight away. Remove lid.
5.Remove puddings from cooker. Uncover and invert onto serving dishes. Serve with custard or cream.
Place each piece of foil once in the centre to allow for expansion.
