Sun-dried tomato, bacon & rosemary damper

This tasty scone-like damper loaf will be a hearty start to the day. It is great with soup and travels well tucked in beside a thermos of tea.

Ingredients

Method

1.Preheat the oven to 190ºC. Line a roasting dish with baking paper.
2.Heat oil in a frying pan and sauté the bacon, onion, rosemary and tomatoes for 4-5 minutes until softened and fragrant. Set aside to cool.
3.Sift flour and baking powder into a large bowl, then stir in cheese, salt and grated butter.
4.Add bacon and tomato mix, tossing together. Add enough milk to mix into a soft dough.
5.Pile into the lined roasting dish and top with extra rosemary.
6.Bake for 25-35 minutes until golden, puffed and cooked in the centre. Cool for 5 minutes before cutting. Serve with butter or creamy feta and extra sun-dried tomatoes.
