Spicy beef sausages with tomato jam

Sausages are the ultimate comfort food. Making your own without casings ensures you know exactly what they contain. Grilled or barbecued, these will be a winner with all the family.

Method

1.Heat oil in a deep frying pan over moderate heat. Add half the onion, half the garlic and tomato; cook, stirring, for 5 minutes or until onion softens. Stir in chilli, vinegar and sugar, cook for 10 minutes or until mixture thickens. Remove from heat.
2.Meanwhile, combine mince, remaining onion, remaining garlic and spice mix in a bowl. Using damp hands, shape mixture into 8 thick sausages. Thread onto skewers. Spray with cooking oil. Heat a char-grill or barbecue grill to moderate. Cook and turn sausage skewers for 8-10 minutes or until browned and cooked. Transfer to a plate. Cover with foil; rest for 5 minutes.
3.Serve sausage skewers with tomato jam, lemon wedges and salad.

For a little extra flavour, you can use balsamic or red wine vinegar instead of white. You can replace the spice mix with a mixture of ground cumin and ground coriander. To prevent bamboo skewers scorching during cooking, soak them in cold water for 20 minutes before you use them or: the barbecue.
