Method

1.Squeeze excess liquid from potatoes. Transfer to a large bowl with butter and thyme, season to taste. Mix well. Divide mixture into four.
2.Heat oil in a large frying pan on medium. Place each portion of potato mixture into pan, pressing down firmly to flatten. Cook 4-5 minutes, each side, until golden brown. Drain on a paper towel.
3.Add spinach to pan, and saute 30 to 60 seconds, until just wilted.
4.Serve each rosti with wilted spinach and a fried egg on top.
