Method
1.Heat butter and oil in a 20cm frying pan on medium. Cook potato for 8-10 minutes, until golden and tender. Remove and drain on a paper towel.
2.Whisk eggs in a jug. Season to taste. Pour into pan. Cook on medium for 4-5 minutes, until omelette begins to set. Sprinkle with potato and remaining ingredients.
3.Cover and cook for a further 5 minutes on low, until cheese has melted and omelette is set. Serve, hot or cold, in wedges with toast for breakfast, or salad for lunch or dinner.
