Method
1.Whisk sour cream and lemon zest in a small bowl.
2.Combine avocado, red chilli and juice in a medium bowl. Season with salt and pepper. For each serving, place an egg ring on a serving plate and spoon avocado mixture into ring. Lift ring carefully.
3.Roll a slice of smoked ocean trout into a flower shape. Place next to avocado. Top with sour cream mixture. Drizzle with a little olive oil and garnish with plenty of freshly ground black pepper. Serve.
For the best result, choose firm ripe avocodoes. You can use smoked solmon instead of ocean trout.
