Mixed berry brioche

This rich and sweet berry brioche takes just ten minutes to create, making this the perfect fruity, creamy snack.

Method

1.In a bowl, using an electric mixer, beat cream, icing sugar and vanilla extract until soft peaks form. Lightly fold mascarpone into cream mixture.
2.Toast brioche. Spread with honey and cream mixture. Top with berries. Sprinkle with mint and dust with icing sugar and cinnamon to serve.

A combination of banana, kiwi, pear and passionfruit would also be a delicious topping. Use fruit toast instead of brioche.
