Method

1.Heat 2 teaspoons of butter and 2 teaspoons of olive oil in a frying pan over medium-high heat.
2.In each pan, cook 2 sausages for 2 minutes, turning. Add 1 bacon rasher to each. Cook bacon both sides. Add some mushrooms and 3 tomatoes. Cook 3 minutes, stirring occasionally, until all ingredients are cooked.
3.Crack 2 eggs into each pan. Cook 2-3 minutes, for runny eggs. Season with salt and pepper, to taste. Serve in pans with slices of hot buttered toast.

Frying in a combination of butter and oil gives you that yummy buttery flavor but with less risk of the butter burning. Swiss brown mushrooms have a stronger flavour than regular white mushrooms. If you don’t have four small visually appealing frying pans for the individual serves, cook the four portions in one large frying pan – or even better, a large paella pan. Note, the eggs will continue to cook after you remove the frying pans from the heat, so you might like to under-cook them a little.
