1.Preheat grill on high. Line an oven tray with foil.
2.Place mushrooms on tray. Season to taste. Grill 4-5 minutes, until tender and juicy.
3.Meanwhile, melt butter in a frying pan on medium heat. Whisk eggs and cream together. Season. Add to pan and cook 3-4 minutes, stirring, until almost set.
4.Spoon eggs onto mushrooms. Sprinkle with herbs and parmesan. Serve with toast.
When scrambling eggs, move the mixture around in the pan to ensure it cooks evenly. Remove from heat when slightly undercooked – it will continue cooking for a little while.
