Method
1.Heat butter and oil in a large frying pan on high.
2.Add mushrooms and garlic and cook, stirring, 1-2 minutes or until mushrooms begin to soften.
3.Pour in cream. Bring to boil, stirring. Season to taste. Spoon onto toast and serve.
You could use a mixture of enoki, oyster, shiitake and button mushrooms but use whichever mushrooms you like. Creamy mushrooms and garlic on toast is delicious served with steamed asparagus or wilted baby spinach.
