Method
1.Preheat oven to 180°C/160°C fan-forced Grease 4 x 1-cup ovenproof dishes. Place dishes on a baking tray.
2.Heat oil in a small frying pan over moderate heat. Cook and stir onion and garlic for 1-2 minutes, or until softened.
3.Combine bread, onion mixture and pizza cheese; spoon into prepared dishes.
4.Whisk eggs. milk. ricotta and chives in a jug; season with salt and pepper. Pour evenly over bread mixture; soak for 15 minutes. Top with tomato. Bake puddings for 30-35 minutes or until just set. Cool slightly.
Here’s an easy way to add extra fibre: use wholemeal or grain bread instead of white.
