Method
1.Preheat oven to 200°C. Lightly grease a baking tray.
2.Prepare hot cross bun dough, adding orange rind and fennel seeds with flour.
3.Punch down dough with fist to release gas. Knead for a few minutes on a lightly floured surface. Divide dough into 3 equal pieces. Roll into long sausages.
4.Plait pieces together, pressing ends together to secure. Place on tray, cover with a towel and stand in a warm place until doubled in size (about 40 minutes)
5.Place eggs in a small saucepan and cover with water. Add vinegar and food colouring and simmer for 7 minutes. Cool under cold water. Drain well.
6.Brush bread with beaten egg. Push red eggs into dough. Bake for 25-30 minutes. Transfer to a wire rack to cool.
Proving is essential for yeast to grow and give bread its characteristic texture.
