Method

1.Preheat oven to 200°C (180°C fan-forced). Line an oven tray with baking paper. Place chicken in a bowl with mayonnaise; toss to coat.
2.Combine cornflake crumbs, paprika, garlic salt, herbs and pepper in a bowl. Remove 1 piece of chicken from the mayonnaise; wipe off excess. Coat chicken in crumb mixture. Place on tray. Repeat with remaining chicken pieces. Spray chicken with oil.
3.Bake 15-20 minutes, turning halfway, until golden and cooked through.
4.Meanwhile, make fried rice: heat oil in a large wok or frying pan on high. Stir-fry vegetables 1-2 minutes. Add garlic and ginger; stir-fry 1 minute. Add rice. Cook, tossing, until well combined and hot. Serve nuggets with rice and sauce.

For easy coating, combine all crumb ingredients in a plastic bag and shake to coat 3-4 pieces of chicken at a time. You could use thigh fillets instead of breast, if preferred.
