Method

1.Preheat oven to moderate, 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.
2.In a medium saucepan, combine sugar, butter and syrup. Stir over medium heat until sugar dissolves. Add fruit and spices. Bring to the boil. Remove from heat and cool for 10 minutes.
3.Prepare packet cake following packet instructions. Spread evenly in pan. Sprinkle over fruit mixture and top with almonds. Bake for 25-30 minutes. Allow to cool in pan 10 minutes before transferring to a wire rack to cool completely.
4.ICING: In a small bowl, combine icing sugar and water. Add a few drops pink food colouring, if liked. Drizzle icing over cooled slice.
5.Cut slice into squares to serve. Store in an airtight container.
