Method

1.Preheat the oven to moderate, 180°C (160°C fan-forced). Lightly grease two oven trays.
2.Beat butter, sugar and essence in a small bowl with an electric mixer until smooth.
3.Transfer the mixture to a large bowl; stir in the remaining ingredients until combined.
4.Roll the mixture into balls and place on prepared oven trays. Bake for about 15 minutes or until golden brown. Cool on trays.

Suitable to freeze. Not suitable to microwave.
