Spicy cheese damper
1.Preheat oven to 180°C. Lightly grease a scone tray. Sift flour and a pinch of salt into a large bowl. Add butter. Rub in lightly using fingertips.
2.Make a well in centre of flour mixture. Pour in milk all at once. Using a bread and butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
3.Turn onto a lightly floured surface. Knead lightly. Press or roll out to form a circle, about 4cm thick. Place on prepared tray.
Topping
4.Combine all ingredients in a small saucepan. Heat gently until melted. Spoon liberally over loaf. Bake for 20-25 minutes, until loaf is golden and firm. Cool on a wire rack. Serve warm with butter.
This damper freezes very well. Just wrap in foil, thaw at room temperature and reheat at 180°C for 5-10 minutes.
