1.In a large frying pan, bring vermouth, green onion, parsley and bay leaf to boil on medium heat. Season, add prawns and cook for 3 minutes, until pink. Remove from heat and set aside to cool completely. Remove prawns with a slotted spoon.
2.Meanwhile, combine mayonnaise with tarragon and season to taste.
3.Arrange a layer of potato on serving plates. Top with lettuce and prawns. Drizzle with tarragon mayonnaise and serve.
