1.Using an electric mixer, beat sifted icing sugar, butter, evaporated milk and essence in a large bowl on medium speed for 2 minutes or until smooth. Cover; refrigerate for 30 minutes or until firm. [KIDS: Roll rounded tablespoons of mixture into balls. Place on baking trays lined with baking paper; press to flatten]. Refrigerate for 30 minutes.
2.Add a few drops of the green colouring to melted chocolate; stir to combine. Stand until cooled and thickened slightly. Using 2 forks, dip patties into chocolate, draining away any excess. Return to trays. Refrigerate for 30 minutes or until set. Trim away any pooled, cooled chocolate from patties. Serve.

To melt chocolate, place chocolate in a small, deep microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth. Use any leftover melted chocolate in bowl to dip fruit, such as strawberries. Freeze any leftover evaporated milk or use to make hot chocolate or milkshakes.
