Ingredients

Method

1.Preheat oven to hot, 200°C. Lightly grease an 18 x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above pan edge.
2.In a bowl, using an electric mixer, beat butter, sugar, egg and rind together until light and fluffy. Sift flours together, returning husks. Blend into creamed mixture with pepitas. Press mixture into prepared pan.
3.Spread top with jam and sprinkle evenly with seeds. Bake for 20-25 minutes until golden. Cool in pan. Cut slice into squares. Cut squares in half to form triangles.

Pepitas are flat green seeds from pumpkins (with white hull removed). They are an excellent source of iron and zinc. They can be found in the health-food section of your supermarket.
