No-bake chocolate wheaten slice

Method

1.Line a 20cm x 20cm pan with baking paper. Place all the biscuits in a food processor. Pulse until you get a mixture of finer crumbs with a few larger bits (or put the biscuits into a large zip-lock bag and use a rolling pin to break them up).
2.Place the butter, sugar, cocoa and vanilla essence in a large saucepan. Stir over a gentle heat until the butter has melted and the sugar has dissolved. Remove the pan from the heat.
3.In a separate bowl, beat the egg well with a whisk. Pour the beaten egg into the chocolate mixture, whisking quickly to combine (the mixture will become thick and shiny).
4.Add the biscuit crumbs, dried apricots and walnuts to the chocolate mixture. Stir well to combine and press the mixture into the prepared pan. Place in the fridge for half an hour to set.
5.To make the icing, sift the icing sugar and cocoa into a bowl. Add the softened butter and enough hot water to make a spreadable icing. Spread the icing over the chocolate base and sprinkle over the coconut. Put back in the fridge to set and cut into squares.
