Mixed wonton soup

Who doesn’t love a wonton soup on a cold night (or any night really!). This recipe is so quick to make and makes for a comforting – and thanks to the addition of chicken, pork, prawns AND dumplings – is a hearty, filling meal that will leave you satisfied.

1.

In a large saucepan, combine stock, ginger and lime leaves over medium heat. Bring to simmer.

Add chicken breast to stock and cook gently 10-12 minutes. Transfer to a plate and rest 10 minutes. Shred chicken.

3.

Return stock to boil on high. Add wontons and noodles and cook 1-2 minutes.

4.

Stir prawns and bok choy through and cook a further 1-2 minutes, until wontons are tender, prawns are cooked through and buk choy wilts.

5.

Divide wontons, noodles, prawns and buk choy among bowls. Top with pork and chicken. Ladle over hot soup. Serve sprinkled with green onion. Accompany with chilli and soy sauce.
