2.In a bowl, combine mince, breadcrumbs, potato, carrot, zucchini, onions, egg and sauce. Season to taste and mix well.
3.Roll heaped teaspoonfuls of mixture into balls. Heat oil in a large frying pan on high. Cook meatballs, tossing, for 4-5 minutes, until browned. Drain on paper towel.
4.Spoon macaroni into a large casserole dish (or 4 individual ones). Combine meatballs, sauce, tomatoes and parsley in a bowl. Season to taste. Spoon over macaroni. Sprinkle with mozzarella.
5.Bake 15-20 minutes, until pasta is hot and cheese melts. Sprinkle with extra parsley to serve. Accompany with salad and crusty bread
