Grilled pork cutlets with pea chutney

A dish suitable for any night of the week, tender pork cutlets are wonderful served grilled to perfection and topped with a fragrant pea and cashew chutney.

Ingredients

Method

1.Place cashews in a food processor and pulse until fine. Add peas, ginger, lime juice, coriander and water. Process until smooth and season to taste.
2.Lightly spray a chargrill with cooking oil spray and heat on high. Cook pork 8 minutes, turning halfway, until cooked to taste. Serve topped with pea chutney.

Pea chutney is also great with chicken or veal, or use it as a spread for sandwiches.
