Method

1.Preheat oven to 190°C. Grease 2 x 12-hole mini-muffin pans.
2.Roll out bread slices to flatten slightly. Cut 1 x 7cm circle from each slice, using a biscuit cutter. Brush with oil and gently press into prepared pans. Bake, 6-8 minutes, until crisp and golden. Cool on wire racks.
3.Lightly mash goat’s cheese and fold through salmon, avocado, and lime or lemon juice. Season to taste with black pepper. Spoon into bread cups just before serving.

Cups may be prepared ahead and stored in an airtight container, but they are best served warm.
