Method
1.Preheat oven to moderate, 180°C. Combine all ingredients in a large bowl and season to taste. Use clear hands to mix together well.
2.Press gently into a 10x20cm loaf pan. Bake for 50-60 minutes, or until cooked through (juices will run clear when tested with a skewer).
3.Drain off any fat from meatloaf and serve sliced with green beans and rocker.
Serve with a delicious mash made with 4 potatoes and 1 kumara, peeled cubed and cooked until tender. Mash well with 1/2 cup milk or cream and a knob of butter, and season to taste.
