Mocha filling
Method
1.Preheat oven to 180°C. Line two baking trays with baking paper. Using an electric beater, beat butter and vanilla essence until creamy. Reduce speed. Add icing sugar and continue to beat until pale and well combined. Add flour and cocoa and mix to combine.
2.Roll walnut-sized pieces of dough into balls and place on prepared trays. Press centre of each ball with your thumb to make an indentation. Bake for 12 minutes.
3.To make the mocha filling, melt chocolate and butter in a small heavy-based saucepan on low heat, stirring constantly. Stir in icing sugar, vanilla and enough coffee to make a smooth mixture.
4.While the biscuits are warm, spoon filling into the centres. Cool completely on wire racks.
