Method
1.Preheat oven to hot, 200°C. Grease 2 x 6-hole friand pans.
2.In a large bowl, combine icing sugar mixture, almond meal, flour and cocoa.
3.In a separate bowl, whisk egg whites until just starting to froth. Fold into dry ingredients with melted butter, mixing until just combined.
4.Spoon into prepared pans. Sprinkle nuts over evenly. Bake for 20-25 minutes, until cooked when tested.
5.Cool in pan for 5 minutes before transferring to a wire rack to cool completely. Dust friands with icing sugar before serving.
