Method
1.Heat oil in a pan then add chicken and stir-fry for 2 minutes. Add tikka masala paste and stir-fry for another minute.
2.Add diced tomato and purée, then simmer for 3-4 minutes to cook chicken and reduce sauce.
3.Stir in lemon juice and yoghurt. Simmer gently for another minute, while heating the rice cup for 40 seconds in a microwave, according to packet instructions.
4.Place rice in a bowl and use a fork to fluff it up. Spoon chicken into the bowl and serve scattered with coriander.
