Pesto
Method
1.Preheat a barbecue grill or chargrill pan on high.
2.To make pesto, place basil, parmesan, nuts and garlic in a food processor. Pulse until well chopped. With motor running, gradually pour in oil through chute, until well combined and smooth.
3.Thread tomatoes and bocconcini alternatively onto skewers. Drizzle with oil and season to taste.
4.Cook skewers 1-2 minutes each side, until tomatoes blister slightly and cheese begins to soften. Serve drizzled with a little pesto.
You could also add cubes of bread the same size as the tomatoes onto each skewer, creating toasted croutons that will soak up the pesto.
