Beef tacos with jalapeño crema

The great thing about this dish, is being able to line up the ingredients and everyone makes their own taco to suit their taste. Try this zesty variation of crema with lime and jalapeno for an extra bit of heat.

Method

1.In a small food processor, add lime pieces, juice, jalapeño slices and salt. Blitz until jalapeños and lime are in small pieces. Add cream and blitz until just starting to thicken. Transfer to a bowl.
2.In a bowl toss shredded cabbage with the lime juice, olive oil and a little flaky sea salt. Sprinkle with toasted sesame seeds and coriander leaves.
3.Take a warmed tortilla, add a spoonful or two of beef and a handful of cabbage salad. Top with a spoonful of crema and more coriander leaves. Sprinkle with your chosen hot sauce. Squeeze over some lime juice or place lime wedges on the side of each plate.
4.Fold up bottom of taco, wrap each side over like a blanket.

Toss sesame seeds for a few minutes in a hot, dry pan until slightly browned. Store-bought rotisserie chicken works well as a filling for tacos. Having options for chilli sauce when entertaining guests is always a good idea so they can choose their own level of heat.
