1.Preheat oven to 180°C (160°C fan-forced). Line a baking tray with baking paper.
2.Place mince, egg, cornflour and herbs in a medium bowl. Season with salt and pepper. Using clean hands, mix until well combined. Shape into 40 balls.
3.Heat oil in a large frying pan over moderate heat. Cook meatballs, in batches, 5 minutes or until browned. Add sauces to pan; cook further 1 minute.
4.Place muffins on prepared tray. Top each muffin with 5 meatballs; sprinkle with mozzarella. Bake 8-10 minutes, or until golden and bubbly. Top with capsicum; serve at once.
You can fill hollowed-out centres of 8 par-baked rolls instead of muffins
