Vietnamese patties in lettuce

Ingredients

Method

1.Chop half the basil and half the mint coarsely. Place whole basil and mint leaves in a bowl. Set aside.
2.Place the chopped herbs, zest, mince, egg and curry paste in a large bowl. Using your hands, mix until well combined. Shape mince into 12 patties. Place on a plate. Cover with plastic food wrap; chill for 15 minutes.
3.Meanwhile, soak noodles in hot water in a large heatproof bowl for 3-5 minutes or until softened. Drain. Using kitchen scissors, snip noodles into short lengths. Add onion, carrot and sprouts. Whisk sauces and juice in a jug.
4.Spray patties with oil. Heat a large frying pan over moderate heat. Cook patties in batches for 2-3 minutes each side or until brown and cooked.
5.To serve, place lettuce on plates; top with noodle mixture, reserved basil and mint leaves. a patty and sauce.

If basil is unavailable, use coriander.
